tuna mayo don (rice) simple recipe from midnight kitchen

 
 
 
Tuna mayo don
 
Tuna mayo don is very popular food not only in japan but also in korea.
In fact, any rice food with tuna and mayonnaise is considered tasty food in korea.
So, when I watched this episode in the drama, midnight kitchen,
I made tuna mayo don right away because I couldn't help making it.
Though there are many ways to make tuna mayo don,
this recipe from midnight kitchen is very simple and doesn't require many ingredients.
Anyone can use this recipe for your simple meal!  
 
 
INGREDIENTS (serves 1)
 
Essential:  
 
1/2 onions
 
mayonnaise
 
1 canned tuna
 
perilla leaf 
 
 
 
Optional:  
 
miso soybean paste 
 
 
 
 
 
METHOD
 
 
Step1. prepare finely chopped onions
 
Step2. mix tuna, mayonnaise and onions
 
 
 
 
Step3. Add miso soybean paste
(According to your taste)
 
 
 

 
Step4. Add perilla leaf on the top

midnight kitchen, "the way to eat butter rice"

 
From the japanese drama, shinya shokudo,
 I realised that rice only with butter and soy sauce can look like delicous.
 
 
The ingredients needed for this food is only
"buttrer, rice and soy sauce" (Actually, I don't know it can be called as food)
And could not be delicous for some people and not that healty one,
I love this food though
 
 
 
 
 
First, add butter on hot rice!
 
and to melt the butter well, put up some rice on the butter
 
 




Second, wait for the butter melting!
 
for about 30 seconds.
 
 




 
It is melted!




Third, Add a little bit of soy sauce on it
 
 
 
 
And enjoy it! :)

Yakisoba (焼きそば) recipe from midnight kitchen

 
Yakisoba / 焼きそば
 
 Yakisoba is japanese fried noodles.
It is cooked mostly with cabbages, onions and porks.
Usaully, fried egg is on the noodle.
 
This recipe also from my favorite japanese food drama, midnight kitchen, 深夜食堂
 
 
INGREDIENTS (serves 1)
 
Essential: 
Noodle
 
Cabbages
 
Onions
 
1 egg
 
Carrots
 
2 teaspoons oil
 
 
Optional:
50g porks
Aonori
Katsuobushi 
 
 
 
For spices:
Yakisoba sauce
 
 
METHOD
 
 
Step 1. Cook the noodles just washing with hot water.
 
 
 
 
Step 2. Fry all in gredients (cabbages, onions and so on)
and add cooked noodles.
 
 
 
 
Step 3. Add yakisoba sauce.
 
 
 
Step 4. Add fried egg on the top.
 
Add some aonori, if you want !

Japanese food from the drama, midnight kitchen, shinyashokudou (深夜食堂)

Shinya shokudo is one of japanese dramas from TBS
It's genre is food, human drama and comedy
 
 
 
Short descriptions about this drama is like below
 
 
Set in a small restaurant in the corner of a shopping district. The unusual eatery is only open after midnight, and its standard menu consists of just a single choice. However, the customers still come for the amusing chatter and the proprietor's willingness to cook any dish that they request. This drama depicts the lives of the restaurant's patrons, including a yakuza, an unsuccessful actor, a group of office ladies, a newspaper delivery boy, and a stripper. --Tokyograph 
 
 
 
 just like from the descriptions, there only three limited menu.
But in this drama, there is always different food from every episode.
The policy of this restaurant is that the chef cook the requested food from customer if the chef can make the food right away
 
So I could learn a lot of japanese food from this drama.

THE ONIGIRI, Korean onigiri chain stores.

My favourite japanese food is "onigiri"
After I ate onigiri in korea at the onigiri specialised restaurants,
I become really to like onigiri.





 
There are two famous franchise chain stores in korea.
One is "The onigiri", and the other one is "Onigiri and Igudon (Homemade Rice Ball & Beef Over Rice)"
 
My favourite one is "The onigiri" and I would like to introduce that store.

The onigiri has so many kinds of onigiri.
There are donkatsu, cheese and fish eggs, tuna mayonnaise, crab and fish eggs, crab salad, tuna and fish eggs, cheese tuna mayonnaise, bacon and kimchi, beef with chilli paste, almoned anchovy, spicy tuna, kimchi and tuna, cheese tuan and fish eggs, spicy anchovy, kimchi and fish eggs, beef and chilli, spicy grilled short rib patties, grilled short rib patties, spicy spam and teriyaki spam.


And not only onigiri, they also sell udon or ramen and so on.

This is normally how I order.
With udon, I can enjoy onigiri much tasty.
Kimchi bacon, tuna mayonnaise and udon!

In korea, tuna mayonnaise is very popular.

Casdose (カスドース), the evolution of Castella from nagasaki


This post refers to korean TV program documentry, "Food Odyssey", KBS


Japan is the first country where accept western bread.
They have a unique kind of bread,
which is "CASDOSE"



It is made of a lot of eggs.
Casdose is very similar to castella, one of bread representing japan.
600 years ago when eggs and sugar were valuable , casdose created.

Castella is the base of casdos.
First, this is the procedure of makig castella in Nagasaki, Japan









 
 
After castella has made, cut the castella like the photo below,
and prepare eggs, sugar syrup and sugar.



Soak those castella in the eggs to coat them
 
 
 


After coat castella with eggs
 
 
 

 
Coat them in the sugar syrup
 
 



Scoop out them from sugar syrup
 
 
 




and mix with sugar
 
 
 
 


 
 
It was really precious and luxurious high - class dessert at first.
This shows how the bread which is meals for western countries, can become luxurious desserts in eastern countries.
